Vegan recipe to try today!
I’ve had quite a few clients who are trying out new ways to approach their nutrition (and finding great success!), some of them vegetarian/vegan. So, I wanted to share with everyone a new recipe to try that is raw, vegetarian, and vegan!
Avocado & White Bean Salad with Vinaigrette
Salad:
- 1 can white beans
- 1 avocado, chopped
- 1 Roma tomato, chopped
- 1/4 sweet onion chopped
Vinaigrette:
- 1 1/2 tablespoons olive oil
- 1/4 cup lemon juice
- fresh or dried basil to taste
- garlic, finely chopped to taste
- salt & pepper to taste
- 1 teaspoon mustard
Whisk vinaigrette ingredients together then pour over salad base and mix well.
Refrigerate for a few hours before serving. Enjoy!
Enjoy the whole recipe and get more than 25 grams of protein or split it in half and enjoy on 2 slices of whole wheat toast for 20 grams of protein!
